The market for industrial cocoa powder in the U.S. is estimated to be approximately 400 million pounds annually. It is offered with fat contents ranging from less than 1 percent to over 24 percent, with the vast majority of sales for 10 ⁄ 12 type, indicating a cocoa butter content of between 10 and 12 percent. Yet in most applications cocoa butter does not contribute to the final product, and in many it can be detrimental. In fact, several studies show that many products outside of the diet food segment would benefit from a defatted (less than 1% fat) cocoa.
