The theory and practice of oils and fats processing have been developed over a number of decades, culminating in the very large continuous refineries in use in the North American soybean industry with throughputs of up to 2,000,000 lbs per day. Located close to the oilseed growing areas, and frequently linked to extraction plants, these refineries are assured of consistent supplies of optimum-quality oils which, with extended production runs, are used to generate a range of high-quality liquid and solid oil products. Specifications for these products tend not to be overcomplex, focusing predominantly on flavor, keepability and solids profile for the most part.
