Every company has a production problem from time to time. Determining the cause and correcting it without making the problem worse or creating excessive downtime can be a trying experience.This paper will cover some of the more common problems found in chocolate and coating production of hollow, solid, one-shot and enrobed items— from premoulding considerations to demoulding of finished product. My personal criteria, gleaned from too much personal experience, can be broken down as follows: • Study the process, consult your standard operating procedures (sops) and adhere to proper parameters. • Change one parameter at a time, noting any changes. • Watch your time and temperature. • Document, document, document for future problem solving. • Trust your line techs. • Don’t be afraid to consult your suppliers. This will not cover every potential problem or solution, just some of what might be more common to chocolate and compound coating production.
