Reliable dry ingredient handling is an important aspect of any confectionery process. Unfortunately, problems with the systems designed to handle these materials are commonplace. A general understanding of the fundamental principles of solids flow is essential and this understanding is often lacking. Consequently, many industrial processes are compromised by material-handling problems that often affect product quality as well as manufacturing costs.
