J elly confections are a significant and growing segment of our industry and they are presented to the consumer in a wide variety of ways. Their presentation requires some method of turning the liquid gel syrup, prepared by cooking, into a shaped piece, wrapped and packed, ready for purchase by the customer. The shapes are a major part of the attraction of these confections and span a whole creative range from gummi bears to jelly roll-ups. In keeping with the Back to Basics initiative of the PMCA, this paper will describe the basics of the forming and shaping processes used for the wide range of jelly confections and show examples of their manufacture.
