Natural colors are gaining popularity, particularly in the confectionery industry. Unlike artificial food colorants, natural colors require special formulation considerations since they are susceptible to many environmental factors, including temperature, pH, water activity and light exposure. While the color palette with natural colors is limited when compared to artificial colors, their use is possible in many confectionery applications.
