Food waste is a major generator of greenhouse gas (ghg), a principal contributor to global climate change. Attempts are being made to reduce ghg by diverting food waste through food-to-food operations. Upcycling is an approach to divert such foods that would otherwise be wasted into beneficial uses with tangible benefits to the environment and society.
