The cost and source of dairy ingredients used by confectioners for domestic production, and the dairy costs of foreign made confections, are very different than a generation ago. There are now multiple cost influences other than just local agricultural factors, or even national supply and demand. This paper will examine the history of the American dairy industry, the world dairy industry (and the price relationship between the two), and major causal factors of international dairy supply and trade.
