This paper will cover the technology of two well-established hard-candy productsin the confectionery industry,brittles and crunchies. They are often concentrated in small-scale manufacturers’range of products, but have also expanded into large-scale brands,demanding highertechnology in manufacture. Each will be explained in a Back to Basics way to show the fundamentals of their structure, their recipes and the process for both types of products, and manufacturing by batch and continuous operations.
