Sanitary design is a foundational skill that carries through many aspects of a production facility. The use of the word “current” in current good manufacturing practice (cgmp) connotes continual positive change and improvement in how we do business. We work in environments that many of us would have considered a dream as children — making chocolate, candy and confections, therefore, it is important to review these important foundational skills and consider ways that we can perform them more effectively and, in doing so, helping ensure the success of future generations of confectioners.
