The past few years have seen increasing crossover between confections,snacks and bakery. The prevalence of snacking at all times of day and demand for new, innovative products has blurred the lines between candy and other categories.Additionally, the trend towards more premium products has fostered increased consumer knowledge about labels and chocolate.This trend has necessitated an expanded tool set from product developers, as the chocolate needed for bakery has its own set of requirements that differ somewhat from our typical confectionery specifications.
