All confectionery panning processes have an extensive background in why certain basic steps are followed.The process practices have developed over the years into a set of standard operating procedures (sop s) or best demonstrated practices (bdps).There will always be slight variations because of equipment, environment and/or raw materials introduced into the process. As research and innovation occur some steps may need modification or upgrades to make the process produce a high-quality finished product. Following the bdp’s basic outline with individualized variations should allow one to acquire an understanding of the process of confectionery panning. As one’s experience grows,these standard procedures become more effortless to execute.
