Dairy flavors are used by almost all sectors of food manufacturing, imposing many challenges on the dairy flavorist at the time of developing a specific flavor. Dairy flavors are also incorporated in products where dairy ingredients cannot be used but dairy-flavor nuances are required. Because of the complexity of many food matrixes and the restrictionsimposed from regulatory and safety concerns, several aspects have to be taken into consideration by the flavorist, such as the final application (end product) in which the flavor will be used,the flavor characteristics and commercial aspects.
