Most soft candy moulding operations utilize closed rooms for conditioning or drying candy after it is deposited. Unfortunately, many of these rooms condition the candy improperly, either too slowly, too quickly, nonuniformly or at the wrong temperature and humidity. Some rooms are too small and some are too large. With proper planning, many of these pitfalls can be avoided.
