The term “confection” is generally synonymous with “candy” in the United States of America. In the United Kingdom however, confections can be divided into three categories: (a) sugar confections, (b) chocolate confections, and (c) flour confections. Sugar confections include products such as hard candies, toffees, fudges, fondants, and jellies, while chocolate confections refer to sugar confections that are covered with chocolate including chocolate bars and chocolate blocks. Lastly, flour confections refer to baked products (Minifie, 1989).
