Gummi confections were first produced in 1933 by Haribo AG in Germany and continue to be popular items, especially with children.This is most likely due to the wide variety of brilliant colors, shapes and fruity flavors. The chewiness can vary from a hard piece favored by Europeans to a softer and more elastic piece favored by Americans. Traditionally, gummi confections are made using gelatin. It is the gelatin that gives the gummi confection its characteristic properties such as good flavor release, memory and a clear, translucent appearance. However, gelatin use has become an issue due to health concerns, processing issues, dietary restrictions and religious laws.
