t’s an exciting time to be working with flavor. While some constants always remain — for example, the majority of new products launched in the marketplace will be chocolate, strawberry, orange or vanilla flavored— we are seeing a number of new and exotic flavors. Most of these flavors are influenced by two major trends: health and wellness and authentic ethnic. Ten years ago, mango was an exotic tropical fruit. Today it is a common American flavor. Two years ago, pomegranate was the new “it” fruit because of its superfruit status. This year it is practically everywhere, and giving up its superhero throne to new exotics, like goji and mangosteen.
